Homemade Basil-Pesto

I LOVE this pesto so much!!! It tastes wonderful with italian pasta, of course! But not only! Such as Pesto Prawns with Bean Paste on Prawn Crackers (Click here for the recipe). I am going to post some new dishes coming with this pesto in the next days. I hope you will like this easy going pesto. Once you tried this pesto, you will never want to buy any canned one from the supermarket anymore! :-)

Ingredients for the Basil Pesto:

2 pots of basil
2 cloves of garlic
50g pine nuts
1 pinch of salt
30g  freshly grated parmesan cheese
30g  freshly grated pecorino cheese (if you can not find it, replace it with another 30g of parmesan cheese)
A lot of good olive oil (native virgin)

Mix all ingredients except olive oil with a blender very well. Then mix in the oil slowly until you reach a creamy texture. That’s it! Enjoy!

    I have made three batches of pesto and wondered if I need to refrigerate it? I made frozen cubes for future dinner recipes.
    So glad I planted it this summer and it went wild!

      Hi Amy,

      Thanks for stopping by. Wow, three batches of pesto! This is quite a lot. But, if you love pasta, then you will get rid of them very quickly (like me). ;-) I have never tried to freeze any till now. However you definitely need to keep them in fridge. Normally it can be kept for 2 or 3 three weeks without any problem. Enjoy! :-D

      Hey Sofia,

      Thank you for stopping by! I am happy you like my pesto. I am addicted to all kinds of pestos these days because it not only goes wonderfully with pasta but also almost everything else. Almost weekly I make the basil and tomato pestos and these are so soon eaten up at our home (I can just eat pestos everyday)! :-P Now it is Autumn and I can not wait to make my first fungi pesto shortly. It is sure this will be one of my next posts. :-D
