Steamed Cod with Wild Garlic Miso Sauce

These days I am really crazy about the wonderful aromatic wild garlic. I am feeling so sorry the season for the wild garlic is now almost over. So, right before the end of the season, I bought a plenty of the last wild garlic from my favorite farmer and made some bottles of wild garlic pesto. Knowing that I will not be short of my favorite wild vegetable during the next months really make me feel good. 😉

This time I experimented with a spice version of the wild garlic pesto. What you need is only to get some nice spicy red pepperonis, cut them and add them to my last recipe of wild garlic pesto. After several days you will get a really wonderful mildly spicy pesto.

For the steamed cod I put a nice thick piece of norwegian cod on top of some yellow zucchini slices, green onions and some garlic together into a bamboo steaming basket. Then some pieces of lemon on top of the cod and steaming it on the cooking water for about 15 minutes.

Now it’s show time for the wild garlic miso sauce, while you are waiting for the fish being cooked. Heat some olive oil in a pan, add 2 tbsp. spicy wild garlic pesto and fry for 1 minute until it’s getting fragrant. Add 1 tsp. Japanese dark miso paste to the pesto and fry for further 5 minutes on small heat. At the end add some salt and pepper. That’s it!

Serve the cod with the wild garlic miso sauce on top. Don’t forget, this sauce is perfect for killing plenty of rice! you will love it! 🙂

 Ingredients (2 Portions):

2 x 250g norwegian cod
1 yellow zucchini
5 green onions
2 cloves of garlic
several slices of ginger
1 lemon
8 spicy red pepperoni
2 tbsp. wild garlic pesto
1 tsp. Japanese dark miso paste
some olive oil in good quality
salt and pepper
