It is a recipe for the heart. Why do I say so?
This recipe comes from my time in Oslo. As you’ve probably noticed, I used to live in Norway for almost two years. Those two years were a very special time for me: I won some very valuable friends, harvested more self-knowledge, discovered meditation as THE method to reach the inner peace for myself …
So, as you can see, wonderful years with intense time.
But what has all this to do with the new recipe?
I learned to appreciate this crisp bread at a place near Oslo at a beautiful lake during an international meditation summer camp. During the one-week stay in that meditation center, for every meal there was only vegetarian food. It was delicious, really! Among all the healthy and tasty food, the best of all was a fantastic crisp-bread!
This crisp-bread was served as a side dish for lunch and dinner. I just could not pass by without picking one or several pieces to put on my plate. The great thing is, it’s not only delicious, but also super healthy! For it consists only of oat flakes and a lot of healthy seeds. No sugar, no white flour, but a lot of fiber and healthy fat. Yet a dream for every sweet tooth!
My favorite way to enjoy this super healthy crisp-bread is lining it with a thin slice of Norwegian brown cheese and some raspberry jam. The simplest and best dessert ever! 😀
If this combination sounds too crazy for you, or if you have no access to the Norwegian brown cheese, you can also replace it with any other cheese. It fits also great with cream cheese. With or without jam, this is for you to decide. 😉
Even if you have never liked crisp-bread, you should/must test this very simple and super delicious recipe! You’ll be surprised when you can not stop snacking one slice after another. 😉
As always, I like to add my own touch to the original recipe that the lovely organizer of the summer camp kindly gave to me (many thanks to Halvorsbøle). On my crisp-bread, I would love to see my favorite sesame and poppy seed. 😉
If you want to make a sweet version of this crisp-bread, simply add some dry fruits such as raisins, plums or dates. Fantastic as a sweet snack!
300ml oat flakes (fine flakes)
100ml pumpkin seeds
100ml flaxseed (bricked)
80ml sunflower seeds
1 tablespoon sesame
1 tablespoon poppy seeds
Combine all ingredients in a bowl and mix well. Spread the dough very thinly on a lined baking sheet. Bake on the middle rack at 190 degrees. Open the oven without turning off the heat, and let it dry for another 10 minutes. It’s done! 🙂
