There is hardly any other fragrance in the world which can smell so seductively sweet as ripe strawberries. At the moment we can get the succulent and sumptuous red cuties in their full maturity from our regional market. I could really guzzle a huge portion of it every day, without batting an eyelid. 😉
As I still can not have enough of these sweet beauties, I’m even starting to integrate them into my main meals. For this summery and light salad, I combine the sweetness of the strawberries with the salty taste of feta cheese. The dressing is based on fruity strawberry vinegar (it tastes thousands times better if it is homemade. Here is a super simple recipe for this heavenly tasting vinegar), which completes the wonderful flavor of the dish. The rosé pepper (also called Pink berries) give the salad a decently sharp note. If they are not available at your home, no problem, just take instead some chilli flakes or cayenne pepper.

Ingredients (2 servings):
2 romaine lettuce hearts
100g feta cheese
2 tbsp roasted soy nuts
For the strawberry dressing:
4-5 strawberries (cut into small cubes)
3 tbsp strawberry vinegar (homemade)
1/2 tsp Dijon mustard
1 tsp rosé pepper (coarsely ground)
3 tablespoons olive oil in good quality
Salt and pepper
Wash and drain the romaine lettuce and crumble the feta cheese, wash and drain the strawberries, cut the green ends. Arrange everything on a large plate.
For the dressing: Combine all ingredients and mix together. Spread on the salad. Serve with baguette.
